Uniformed professional chefs cook each dish to order, including Artisanal Rigatoni with Nonna's Hearty Bolognese, Spaghetti Cacio e Pepe tossed in a carved wheel of Pecorino Romano, and Pumpkin Risotto finished with sage, pumpkin seeds, and amaretti served in mini pumpkins. The station is accompanied by guests' choice of one salad, such as Kale Caesar with Ciabatta Croutons, Insalata Mista with Red Wine Vinaigrette, or Frisée with Gorgonzola and Walnuts.
